Coconut Chia Seed Pudding

Slightly altered from the Oh She Glows cookbook

For the chia pudding: 

  • 1/4 cup chia seeds (more if you use light coconut milk or almond milk)
  • 1 can coconut milk or 16 oz almond milk
  • 2 1/2 tsp vanilla
  • 1/3 cup unsweetened coconut flakes
  • 5-10 drops stevia or 4-6 tsp pure maple syrup (to taste)
  • a pinch or 2 of salt (optional)
  • 1 T Matcha powder (optional -- extra antioxidants!)
Suggested toppings: 

• Granola 
• Fresh fruit, i.e. sliced bananas, berries 
• Coconut flakes 
• Cinnamon 
• Nuts and seeds



  • Mix all ingredients a bowl and wait 10 minutes for chia seeds to absorb water and become like a pudding consistency. If too watery, add more chia seeds.  Cover and refrigerate.
  • Serve the chilled pudding in parfait glasses or glass jars, alternating it with layers of fresh fruit and toppings of your choice.
