Homemade Tomato Sauce

Prep Notes

1.  Core the tomatoes and score bottom with a small "x"

2. Place tomatoes in boiling water for about 30 sec - 1 min until the skin starts to peel off

3. Plunge tomatoes into ice bath and remove skin.  Dice and save the juices

4.  Chop onions, mushrooms, oregano, and basil

5.  Mince garlic

Cooking Time

30-60 min, depending on how juicy your tomatoes were

Yields

2 cups

Ingredients

1.  2-3 lb fresh tomatoes

2.  1 T olive oil

3.  2 onions chopped

4.  1 package organic baby portobello mushrooms chopped

5.  4 garlic cloves

6.  1 1/2 cups finely chopped basil leaves

7.  2 bay leaves

8.  2-3 T fresh oregano leaves

9.  1/4 tsp salt

10.  1/8 tsp pepper

11.  5 drops organic stevia (optional)

Directions

1. Core the tomatoes and score bottom with a small "x"

2. Place tomatoes in boiling water for about 30 sec - 1 min until the skin starts to peel off

3. Plunge tomatoes into ice bath and remove skin.  Dice and save the juices.

4. Heat olive oil over medium heat. 

5.  Add onions and garlic and sauté for 3 minutes

6. Add tomatoes and their juice, mushrooms, bay leaves, oregano, basil, salt and pepper and bring to a boil.

7. Reduce heat and simmer until liquid is mostly or totally gone.

8. Add stevia

9. Discard bay leaves and pour into a blender and blend until smooth.  (or leave it chunky!)
