3 sweet potatoes, peeled and diced into 1 inch cubes
2-3 T olive oil
1-2 T maple syrup
3 tsp cinnamon
salt and pepper to taste
Preheat oven to 425.
Coat baking sheet with parchment paper.
Combine olive oil, maple syrup, cinnamon, salt and pepper in a small bowl.
Spread potatoes in even layer on pan and toss to coat.
Roast 30 minutes or until brown and crispy.
